Tesco's Development Chef Oliver Pedrick has unveiled a budget-friendly chicken and mango chutney traybake recipe that can feed a family of four for under £5. The dish, available on Tesco Real Food, takes just 15 to 20 minutes to prepare and is packed with nutrition.
Pedrick emphasised that traybakes are one of the best ways to cook on a budget, allowing flexibility with vegetables and proteins. The star vegetable in this recipe is butternut squash, though frozen squash works as a substitute. Chickpeas are also essential, as they bulk out the dish and count towards your five-a-day.
For the protein, Pedrick recommends chicken drumsticks over breasts, as they are flavourful and wallet-friendly. To prepare, heat the oven to 240°C (fan 220°C). Place chicken drumsticks, squash, onion, curry powder and oil in a high-sided roasting tin. Season, toss, and roast for 30 minutes until the vegetables are tender and the chicken is golden.
While the traybake cooks, prepare the rice. Pedrick advises using less water than usual to avoid overcooking, resulting in fluffier rice. For sticky rice, skip washing it; for a traditional texture, rinse beforehand. After 30 minutes, add chickpeas, garlic and chilli to the traybake and roast for five minutes. Stir in mango chutney and roast for another five minutes until sticky and bubbling.
Serve the traybake with rice, sprinkled with coriander and lime wedges for squeezing over. This recipe is part of Tesco's initiative to promote healthy eating for families.
