Comedian Bob Mortimer has shared his go-to beans on toast recipe, which swaps tinned beans for a healthier and tastier alternative using queen butter beans, slow-roasted tomatoes, garlic, herbs, and feta cheese. The recipe was revealed on the latest episode of Gone Fishing, where Mortimer appears alongside Paul Whitehouse.
Bob Mortimer's Signature Beans on Toast
Mortimer, 67, abandons the budget supermarket tin of beans in favour of queen butter beans, which he prepares with fresh vine cherry tomatoes. The recipe was later reshared on social media by Bold Bean Co, who posted: "Bob Mortimer is a certified BEAN CHAMP. His signature serve - slow-roasted toms, garlic, herbs, sumptious, fat, juicy QUEEN BUTTER BEANS + a bit of FETA CHEEEESE. BOB, THANK YOU, YOU LEGEND."
Bold Bean Co's Queen Butter Beans are available from most supermarkets for around £3 per jar. The recipe has garnered praise from fans, with one commenting: "My favourite breakfast is exactly that, but without your beans .... because I never thought to add them!! From now on I will though. I love your beans!" Another wrote: "Love this and LOVE Bob Mortimer more than ever now we know he loves a bit of feta!"
Recipe Details
The recipe serves two and requires one jar of queen butter beans (with their stock), 250g vine cherry tomatoes, two to three whole garlic cloves (skin on), three to four sprigs of rosemary (or thyme, oregano, or a mix), olive oil, two to four slices of bread (Mortimer uses brown bread; Bold Bean recommends sourdough), and feta cheese for crumbling.
Method: Preheat the oven to 180°C. Arrange vine tomatoes in a roasting dish with garlic and herbs, close together so they stew and caramelise. Drizzle with olive oil, season, and roast for 25-30 minutes until the tomatoes are jammy. Add the butter beans and their stock, stir, and return to the oven for 6-7 minutes until piping hot. Toast the bread, squeeze the softened garlic from its skins, spread lightly on the toast, heap the beans and tomatoes on top, and crumble feta over with black pepper if desired.
