Mary Berry's Sausage Roll Recipe
Berry's recipe requires six pork sausages, one crushed garlic clove, two tablespoons of sun-dried tomato paste, six chopped mild peppadew peppers, a small bunch of chopped parsley, ready-rolled puff pastry, and one egg for the wash.
Preheat the oven to 220°C (200°C fan or gas mark 7) and line a tray with baking paper. Cut the sausages open, remove the meat, and place it in a mixing bowl. Add the tomato paste, peppadew peppers, parsley, and garlic. Mix with your hands until combined.
Unroll the pastry onto a worktop. Beat the egg and brush it over the pastry. Divide the sausage mixture into three equal portions. Roll one portion into a sausage shape and lay it on the pastry. Fold the pastry over the sausage, press the edges to seal, and cut away excess pastry. Repeat to make three long rolls, then cut each in half to get six regular-sized rolls.
Crimp the edges with a fork and place the rolls on the baking tray. Bake for 25 minutes until golden brown. The result is sizzling, crispy sausage rolls with much more flavor than prepackaged options.
