A food writer has shared how adding a touch of something sweet to your egg salad can transform your sandwich. Egg salad is a wonderfully tasty sandwich filling, but it's one that can be effortlessly elevated with the addition of just a single ingredient. It might sound peculiar, but one food expert has suggested adding maple syrup to egg salad.

The Secret Ingredient

Food writer and recipe developer Kat Lieu shared her secret for a superb egg salad on Simply Recipes, revealing that it was her mother who first introduced her to the idea. She wrote: "Sometimes, Mom would sweeten her egg salad and add crunch with diced persimmons, pears, green grapes, or apples, but it was maple syrup that made her egg salad so memorable."

Kat is a firm advocate of this unconventional recipe. She explained that a hint of sweetness is what sets a typical Asian egg salad apart from its more Western counterpart, though the recipe still retains all the ingredients you'd expect.

Key Ingredients and Method

Both egg yolks and whites feature, along with mayonnaise, although Kat recommends Kewpie Mayonnaise rather than Hellman's or Heinz. Kewpie mayo, available at most supermarkets for around £5, is produced using only egg yolks and a special vinegar blend.

For the egg salad with maple syrup, you'll need hard-boiled eggs with the yolks and whites separated, Kewpie mayonnaise, maple syrup, salt, and white pepper. Mash the egg yolks and combine with the mayonnaise, maple syrup, salt, and white pepper. For every two tablespoons of mayo, add one tablespoon of maple syrup.

Blend together until you achieve a creamy yellow paste, similar to what you would get with devilled eggs. Finely dice the egg whites and fold them into the mixture. Stir until all the ingredients are thoroughly combined. Spoon the egg salad mixture onto untoasted milk bread, though Kat notes that white bread or sourdough are equally suitable alternatives. Place another slice on top and serve straight away.
