A top London chef has shared a method for cooking fried eggs that does not involve a frying pan. Will Murray, one of the two chefs behind the restaurant Fallow, revealed in a TikTok video from July how the kitchen prepares eggs during a busy breakfast and brunch service.
Baking eggs instead of frying
Murray explained that the restaurant does not fry its eggs. Instead, the eggs are baked in a tray. He said: "On breakfast service, we're frying upwards of 50 to 100 eggs a day. What's the hack? We don't fry our eggs, we bake them in a tray."
The chefs use a baking tray with wide moulds, similar to a Yorkshire pudding tin. A small amount of oil is added to each mould, then the eggs are cracked directly into the tray.
Oven time and moisture trick
The eggs are baked in the oven for two and a half minutes at 160C (320F). The trick is to keep a hint of moisture inside the oven. Murray advised: "At home you can use a small pan of water. Look at those egg yolks."
Once the eggs are removed from the oven, salt and pepper are added to taste. Murray said: "Absolutely perfectly fried eggs. Really consistent every time."

The cooking experts at Simply Recipes share the same view. Sarah Epperson noted: "Say hello to the easiest way to make fried eggs for a crowd. In fact, this sheet pan technique for frying eggs might just be the best thing to happen to breakfast since oven baked bacon."
