Cottage pie is a classic autumn dish, offering a warming and comforting meal just as the nights draw in and temperatures begin to drop. It requires around 30 minutes of preparation, making it ideal for those cosy evenings when you fancy putting your favourite music on in the kitchen and rustling up a truly satisfying dinner.
Preparing the beef filling and mashed potato topping is fairly simple, making this a straightforward meal that's perfect for family gatherings or simply when you're after something hearty to treat yourself to. Food blogger Jessie-Sierra Ross, founder of Straight To The Hips Baby, has revealed that your pie will taste even better if you finish it off with a generous helping of good-quality cheddar cheese.
The secret ingredient for a better crust
She said: "Sharp cheddar cheese! The punchiness of the grated cheese helps to cut the fattiness of the meat filling. It's delicious and most certainly decadent."
It may sound obvious, but many people simply grab whatever cheese is lurking in their fridge, which can result in a topping that turns stretchy and gooey rather than deliciously crispy.
Cheddar cheese is a natural partner for mashed potato, melting beautifully to create that perfect bubbling, golden crust that cottage pie lovers adore. It also boasts a rich, full-bodied flavour that works wonderfully alongside creamy mashed potato, delivering a deeply savoury taste.
Why cheddar beats other cheeses
Using a different cheese won't ruin your pie, but the topping will be considerably softer, which can leave the texture rather runny and tricky to slice into neatly. Certain other cheeses can make mashed potatoes far too creamy, leaving them tasting excessively rich and stodgy, which is why cheddar remains the top choice every time.
How to make tasty cottage pie
You will need (for four people):
For the beef filling:
- 450g of minced beef
- Two tablespoons of olive oil
- One medium onion
- One shallot
- Four large carrots
- Two large celery stalks
- Three cloves of garlic
- Four stems of fresh thyme
- Three tablespoons of plain flour
- 600ml of beef broth
- One tablespoon of tomato paste
- Two tablespoons of Worcestershire sauce
- One tablespoon of whiskey
- Salt and pepper
- Parsley (for garnish)
For the potatoes:
- 1.4kg of potatoes
- Six tablespoons of butter
- 60ml of cream
- 60ml of milk
- 170g of cheddar cheese
- Salt and pepper
Method:
Place a casserole dish over a low heat, add the oil, and once hot, add the minced beef. Season with salt and pepper, then cook for around six to 10 minutes until browned. Once the beef is thoroughly cooked, remove it from the dish and transfer it to a bowl, keeping the oil and beef drippings in the pan for later. Finely dice the onions, shallot, carrots and celery, then place them in the dish over a medium heat.
Add the fresh thyme, season with salt and pepper and stir continuously as you cook. Cook for approximately five minutes until the onions begin to brown, then add the garlic and cook for a further 30 seconds. Scatter the flour over the cooked vegetables in the dish until they are completely coated, and cook for a further two to three minutes.
Next, pour the beef broth, tomato paste, Worcestershire sauce and whiskey into the pot. Bring to the boil while stirring, then reduce to a simmer. Add the cooked mince back into the pot and allow everything to simmer, uncovered, for 10 minutes. The majority of the liquid should evaporate, leaving behind a thick, hearty filling.
Meanwhile, prepare the mashed potato topping. Fill a saucepan with cold water, add a pinch of salt and then add the potatoes. Place over a medium-high heat and allow the potatoes to cook for 10 minutes, until they are fork-tender. Drain the potatoes and mash until smooth. Next, place the butter, milk and cream into a jug and microwave in 30-second increments until the butter has fully melted.
Pour the hot buttery mixture over the mashed potatoes and stir well. Sprinkle half of the grated cheese into the potatoes, season with salt and pepper and your cottage pie topping is ready to go. Once the cottage pie filling is ready, take it off the heat and leave it to rest for five minutes. Preheat the oven to 160°C while you wait.
Use a large spoon to scoop the cheddar mashed potatoes onto the filling and smooth it out into a thick, even layer. Scatter the remaining cheddar cheese over the top of the potatoes. Place the entire cottage pie dish into the oven and bake uncovered for 25 to 30 minutes. Your delicious homemade cottage pie will emerge from the oven golden, bubbling and packed with flavour.
