United Airlines unveils British menu by Michelin star chef

United Airlines is introducing a new menu for its Polaris international business class from August, created by Michelin-starred chef Tomos Parry. The menu celebrates British produce and draws on Parry's Welsh heritage, as well as the seasonal ingredients and open-fire cooking that have made his London restaurants renowned.

Menu highlights

The menu opens with grilled beef fillet served with beetroot, Caerphilly cheese, mustard and thyme. A grilled Welsh lobster salad with peach, tomato and fennel herbs follows, showcasing fresh coastal flavours.

For the main course, passengers can choose from wood-roasted Welsh lamb from Rhug Estate in North Wales, accompanied by smoked potatoes, grilled broccoli and green sauce, or halibut served with traditional Welsh laverbread pil pil and parsley potatoes.

Chef's inspiration

Parry, founder and co-owner of Brat, Mountain and Brat x Climpson's Arch, is known for championing British farmers, fishermen and seasonal produce. His new airline menu reflects the same approach, bringing locally inspired dishes to long-haul travellers.

Speaking about the collaboration, Parry said: "I am honoured and excited to be able to create this menu for United Airlines which not only tastes delicious whilst travelling but also showcases our style of cooking at Brat and Mountain, making the most of some of the best of British produce.

"One of the main reasons I became a chef was from my passion for travelling and have found so much inspiration from seeing and experiencing different cultures. It is exciting to be able to be an extension of someone’s own travels now, bringing a taste of the UK to United guests internationally."

Launch

The new menu launches this August, giving United Polaris passengers the chance to experience a restaurant-inspired taste of Britain while travelling on international routes. The dishes were designed in partnership with the team behind Netflix's Chef's Table, aiming to give travellers a flavour of Britain before they land.
