Former Great British Bake Off contestant Briony May Williams has shared a surprising substitution for butter and eggs to make the perfect scone. In her latest TikTok video, she uses lemon curd instead, eliminating the need for both ingredients.

The lemon curd experiment

As part of her ongoing alphabetical exploration to discover whether different ingredients can be incorporated into scones, Briony focused on ingredients beginning with 'L'. She endeavoured to produce sweet scones using lemon curd, a straightforward substitution that removes the requirement for butter and eggs.

In the video, she said: "If these work, they're gonna be so delicious."

How it works

To assist in binding the dough, Briony selected a lemon curd containing a substantial quantity of butter, given that she was omitting butter from the dough itself. The dough is straightforward to prepare, with all ingredients simply combined in a bowl. After the dough is formed and divided into four portions, Briony brushes the tops with milk to achieve a glossy finish once baked.

Following their time in the oven, Briony said: "Oh they smell so good." She then applies a glaze of additional lemon curd and lemon zest. Briony continued: "Oh my goodness! I think these might be the best ones so far. They're really crunchy on the outside and then inside they're really soft and fluffy... they really do taste like lemon curd. They are delish. Lemon curd definitely scones."

Recipe

Here is how to recreate Briony's lemon curd scones:

Ingredients:

  • 200g self-raising flour (or 200g plain flour plus one tsp baking powder)
  • 150g lemon curd
  • 1/2 tsp salt
  • One tbsp milk

Method: Combine all ingredients except the milk to form a dough. Shape into a ball and divide into quarters. Transfer to a baking tray, brush with milk, then cook for six to eight minutes in the air fryer at 180°C or 10-12 minutes in the oven at 180°C fan. Once cooked, remove from the oven and allow to cool before serving.
