Jamie Oliver has shared a cooking tip that he says makes rice perfectly soft before serving. The chef, 51, gave the advice while appearing on fellow chef Theo Randall's YouTube channel after the pair had cooked a Beef Stroganoff together, a dish Jamie said he had "no restraint or self control in stopping eating".

The rice trick

As the pair, who worked together at the River Café for a time, sat down, Theo commented: "This looks amazing. The rice looks beautiful. Lovely, soft, succulent rice."

In response, Jamie explained his top tip for getting rice right: "That rice. I didn't explain it because I was sort of too busy yapping doing other things but, I like stock with it."

He continued: "I just sweated off some onions in a little olive oil and butter, then put the rice in until they were translucent and then double the amount of light stock and then I tied a tea towel around the lid."

"Once it's cooked you turn it off and just let it rest and it seems to just absorb some of that excess moisture and you find, not specifically with this rice, but when you buy the long grain, it just seems to stretch."

Air fryer advice

Meanwhile, Jamie claimed he had found a way to get the most out of air fryers. In a clip shared on his Facebook page, he said: "This is how you take your air fryer to the next level."

"Me and my team pushed the air fryer to its limit - and one of those ways was having thinned cooking of the top of that little tray and having other things reheating at the bottom."

Using a sweet potato recipe as an example, Jamie placed herbs and spices at the bottom of the fryer before sliding a tray back in and putting the sweet potato on the top level. It was suggested that this method could help allow people to prepare two dishes at once without requiring extra time and energy.

He explained: "But if you think about having meat or fish [dripping] onto beans, chickpeas, tomatoes [below], you can really max out flavour and efficiency really fast."
