A trained chef and baker has shared a foolproof oven method that eliminates the common problem of soggy French toast, ensuring a crispy exterior and fluffy custard interior every time. Kristen Hoffman, who runs the recipe blog Baker Bettie, recommends baking French toast on a pre-heated sheet pan rather than frying it in a pan.
Why the Oven Method Works
Hoffman explained that the key is to get a sheet pan “roaring hot” in the oven while preparing the other ingredients. This causes the bottom side of the bread to sear immediately when placed on the pan, locking in moisture and creating a crisp crust. The tray should be heated for at least 20 minutes at 230°C (210°C Fan/Gas Mark 8) before use.
“Not only does this technique give you the most perfect texture for French toast, but it also ensures that your entire batch is finished all at once, so you can sit down with your family or guests and eat together,” Hoffman said. She added that the method is “incredibly fast” once the tray is hot.
Ingredients and Step-by-Step Instructions
The recipe makes eight slices of French toast using simple ingredients: two eggs, half a cup of milk, half a teaspoon of vanilla extract, and eight pieces of brioche bread. A hint of cinnamon can be added if desired.
- Position the oven shelf in the central slot and place a baking sheet on it. Heat the oven to 230°C (210°C Fan/Gas Mark 8). Allow the baking sheet to warm for at least 20 minutes or until ready to cook.
- In a flat dish, whisk together the eggs, milk, and vanilla extract. Optionally add cinnamon.
- Once the oven is fully heated and you are nearly ready to serve, use an oven glove to remove the hot baking sheet. Spray generously with non-stick spray.
- Submerge each slice of bread in the egg mixture, coating both sides, then place on the baking sheet. The slices should sizzle on contact.
- Return the tray to the oven and bake for five to eight minutes, watching closely to prevent burning. The French toast is ready when it is “perfectly crispy on the outside and light and fluffy in the middle.”
