Cheese toasties are a simple and satisfying lunch choice, but without extras they can feel uninspiring. In search of a fresh twist, a recipe for a za'atar and olive cheese toastie caught attention on Instagram, posted by Courtney Gordon as @courtmakeshome.
Two Added Ingredients
The recipe suggests using Castelvetrano or Nocerella olives, but Halkidiki olives on special offer worked well. The other key addition is za'atar, with Schwartz blend proving tasty. The recipe specifies sliced fresh mozzarella instead of the usual grated mozzarella and cheddar combination. Using roughly half a ball of fresh mozzarella was sufficient.
Simple Method
The recipe is straightforward: butter both sides of two slices of sourdough bread, then generously coat one side with za'atar. Toast in a pan over medium heat for three to four minutes until golden and crisp. Flip, cover one slice with mozzarella and chopped green olives, scatter more za'atar, and top with the second slice. Cook over medium-low heat for three to four minutes until golden and cheese melted. Serve immediately.
The resulting flavours were wonderful, distinct from a traditional cheese toastie, and has been made twice since. Next time, Nocerella olives may be tried as suggested.
