Chef Will Murray's Oven-Baked Fried Eggs Method
Oven-Baked Fried Eggs: Chef's Secret for Perfect Results

Fried eggs are a breakfast classic, but one of the UK's top chefs has a surprising tip: ditch the frying pan entirely. Will Murray, co-chef at London's Fallow restaurant, shared the method in a July TikTok video, revealing they bake eggs in the oven for a consistent, perfect result every time.

The Oven Method

Instead of frying, the chefs use a baking tray with wide moulds, similar to a Yorkshire pudding tray. Add a small amount of oil to each mould, crack the eggs in, and bake at 160°C (320°F) for just two and a half minutes. The key is a little humidity in the oven, which can be achieved at home by placing a small pan of water inside.

Will explained: “On breakfast service, we’re frying upwards of 50 to 100 eggs a day. What’s the hack? We don’t fry our eggs, we bake them into a tray.”

Perfect Results Every Time

Once baked, season with salt and pepper. Will added: “Absolutely perfectly fried eggs. Really consistent every time.” The technique is praised by experts at Simply Recipes, with Sarah Epperson writing: “Say hello to the easiest way to make fried eggs for a crowd. In fact, this sheet pan technique for frying eggs might just be the best thing to happen to breakfast since oven baked bacon.”
