Jam tarts are a classic British pastry, perfect for afternoon tea. This recipe from the Easy Peasy Baking campaign promises gloriously golden, crispy results, thanks to a simple step: chilling the dough in the freezer for 10 minutes before baking.
Why This Recipe Works
The secret to crisp, golden jam tarts lies in the preparation. After mixing the dough, wrap it in cling film and place it in the freezer for 10 minutes. This step helps the pastry hold its shape and bake evenly, resulting in a light, flaky texture.
Ingredients and Equipment
To make 12 jam tarts, you'll need 200g plain flour, 100g unsalted butter (cold and cubed), two tablespoons of cold water, and 12 tablespoons of jam (any flavour works, though strawberry is a timeless favourite). You'll also need a mixing bowl, cupcake tray, round cutter or water glass, rolling pin, and cling film.
Method
Preheat the oven to 180°C. Rub the butter into the flour until crumbly, then add cold water and bring together into a dough. Wrap in cling film and freeze for 10 minutes. Roll out to 3mm thick, cut into 12 circles, and press into the cupcake tray. Spoon a tablespoon of jam into each. Bake for 20-25 minutes until golden and the jam bubbles. Cool completely before serving.
