Perfectly crispy and fluffy roast potatoes can be achieved in under an hour with a simple microwave step before cooking, according to TikTok chef Poppy O'Toole. The method, originally shared by MasterChef contestant Shelina Permalloo, eliminates the need for parboiling or preheating the oven.
Microwave First for Speed and Texture
O'Toole demonstrated the technique in a viral video, showing that the entire process from start to finish takes just 40 minutes. The key is microwaving the peeled, odd-shaped potatoes for 10 minutes in a covered microwave-safe bowl. This steams them until 'super tender' and 'cooked all the way through,' as Permalloo explains.
Shake for Crunch
After microwaving, shake the covered container vigorously to roughen the potato edges, which creates extra crispy surfaces. Then transfer the potatoes to an air fryer with salt, oil, garlic, and thyme. Cook at 180°C for 30 minutes without shaking halfway through.
Results: Fluffy Inside, Crunchy Outside
O'Toole praised the results: 'They are good. They're fluffy inside. The fact that they're done in 40 minutes is a triumph. And they've got a good crunch.' This method uses Maris Piper or King Edward potatoes for best results.
