A chef from Serious Eats has shared a simple recipe for turning ripe avocados into crispy fries, offering a crunchy alternative to mashing. The snack, coated in golden panko breadcrumbs, comes together in less than 30 minutes.

The recipe serves two to three people, with 15 minutes of preparation and 25 minutes of cooking time. Ingredients include one cup of panko breadcrumbs, one and a half tablespoons of Tajín (or any chilli and lime seasoning, optional), half a teaspoon of table salt, half a teaspoon of garlic powder, 60ml of extra-virgin olive oil, one large egg, and 480g of Hass avocados.
Step-by-step method
Start by lightly crushing the panko breadcrumbs in a medium bowl until they reach a finer, sandy consistency. Add the Tajín, salt, and garlic powder, then pour in the olive oil and mix until the breadcrumbs are evenly coated. Cut the avocados in half and remove the stones. Place the halves cut-side down, peel off the skins, and slice each avocado lengthwise into eight uniform pieces.
Whisk the egg in a separate bowl. Dip each avocado slice in the egg, let excess drip off, then coat thoroughly in the seasoned panko. Preheat an air fryer to 175°C (or an oven to 220°C for 18 minutes). Arrange the breaded slices in the basket with space between them, and air fry for about eight minutes, flipping halfway, until crisp and golden brown. Serve with chipotle mayonnaise, ranch dressing, hot sauce, or your preferred dipping sauce.

For those who prefer not to mash or fry, a chef at Good Food suggests stuffing avocados with spicy beans and feta. This vegetarian option, which takes 11 minutes to prepare and serves two, combines creamy avocados with kidney beans and crumbled cheese.
