Chef Carina of Recipes by Carina has shared a simple three-ingredient scone recipe that promises light and fluffy results every time. The secret ingredient is carbonated lemonade, such as Sprite or 7UP, which adds no lemon flavor but helps create the perfect texture.

Simple Ingredients, Amazing Results

Carina explained that mixing self-rising flour, cream, and fizzy lemonade creates "the most delicious light and fluffy scones and also the easiest scones you will ever make." The cream replaces butter, coating the flour, while the carbonation from the lemonade makes the scones rise beautifully.

If you don't have lemonade, you can use sparkling water with a couple of tablespoons of sugar. Still water or still lemonade won't work because the carbonation is essential for the scones to rise.

Alternative Options and Ingredients

You can also substitute the cream with full-fat Greek yoghurt or buttermilk, but keep in mind these alternatives have less fat, so the scones won't be as rich.

For 12 scones, you'll need 500g of self-raising flour, 300ml of double cream, and 300ml of carbonated lemonade. Preheat your oven to 220°C (200°C Fan/Gas Mark 7) and line a baking tray with non-stick paper.

Method for Perfect Scones

Mix the flour, cream, and lemonade with a wooden spoon until just combined. Turn the dough onto a floured surface, shape into a rectangle about 4cm thick, and cut into scones. Place on the tray, brush with milk, and bake for 20-25 minutes until golden brown.

Allow to cool before serving. Wrap leftovers in a tea towel to keep fresh, or store in an airtight container for up to two days. Refresh in the oven or microwave before serving.
