Black Garlic: The Japanese Innovation That Reinvented Garlic

Black garlic, a staple in modern cuisine, is not an ancient traditional food but a recent innovation developed in Japan in the late 20th century. The process is often attributed to Japanese scientist Hamasuke Hamano, who spent a decade refining a method to make garlic more palatable before securing a patent in 2004.

Black garlic is made from regular garlic bulbs kept under warm, humid conditions for several weeks to months. Unlike traditional fermentation, no added microorganisms are used. Instead, heat and moisture trigger Maillard reactions, which darken the cloves and give them a sweet, rich flavour. The compound allicin, responsible for garlic's sharp taste, breaks down, resulting in a milder, almost spreadable texture.

Researchers have noted potential health benefits, including higher antioxidant activity than raw garlic. Studies suggest improvements in blood sugar and cholesterol levels, as well as anti-inflammatory and antibacterial properties. However, most studies are laboratory or animal-based, and human trials are lacking. Variation in production methods also makes it difficult to compare results.
