Lidl has launched a new range of £1 meal recipes in partnership with budget cooking expert Miguel Barclay. The seven recipes use low-cost ingredients available in Lidl stores, with each meal costing around £1 per portion.
Healthy eating seen as costly
Research carried out for the supermarket found 69% of people believe eating healthily costs more than choosing less nutritious food. Almost half (48%) said they had picked an unhealthy option over the past year because it was cheaper, while 45% felt the cost of groceries makes it harder to eat well or make environmentally friendly food choices.
Shoppers open to small changes
The recipes are designed around everyday cupboard staples and ingredients including vegetables, beans and lentils, encouraging shoppers to make small changes rather than overhaul their diets completely. According to the research, 62% of people said they would happily tweak their weekly shop if it meant reducing their environmental impact without spending any extra money.

Miguel Barclay, whose One Pound Meals books focus on affordable cooking, said: "I've always believed that great food doesn't have to come with a big price tag. These £1 Planet Plate recipes show how little changes, such as adding more vegetables and beans, can be easy to create at home, without compromising on flavour or affordability."
Wellness Wednesdays promotion
Alongside the recipes, Lidl is introducing a new Wellness Wednesdays promotion for Lidl Plus members. Between July 30 and September 2, customers will receive 10% off one product from the supermarket's Live Well range every Wednesday. The retailer said the offer builds on existing discounts, including its Pick of the Week fruit and vegetable deals, as it looks to make healthier shopping more affordable.
