A popular YouTube chef has shared a surprising method to make inexpensive steak taste like a premium cut: marinating it in coffee. The technique, demonstrated by Cowboy Kent Rollins, who has over three million subscribers, involves soaking the meat in cold coffee for several hours to break down its fibers.

The Coffee Marinade Method

In a recent video, Rollins claimed his marination method is something "no one has ever heard of." He explained: "We're talking about marinating these steaks in coffee. Yep, you heard it, coffee. You want to make sure the coffee is good and cold before you ever start this." The acid in coffee helps tenderize the meat, he added.

To try it, place the steak in a sandwich bag and pour cold coffee over it until fully submerged—about four cups. Refrigerate for at least four hours, though eight hours is preferable. After marinating, remove the meat, pat it dry with paper towels, and season with salt, pepper, or other spices. Let it rest for 30 to 45 minutes before cooking.

Results and Flavor

Rollins cooked the steak on a BBQ for a smoky flavor, but it can also be prepared on the hob. After tasting, he said: "I am shocked. I have cooked hundreds of sirloins that were never this tender. The flavour that you get from the coffee is not like a cup of coffee, but you can sort of taste the aroma of coffee."

The chef assured viewers that the steak won't taste like coffee, despite the long soak. This technique offers a budget-friendly way to enjoy a restaurant-quality steak at home.
