Jamie Oliver's 20-Minute Chicken and Sausage Stew Recipe
Jamie Oliver's 20-Minute Chicken and Sausage Stew

Jamie Oliver has shared a 20-minute chicken and sausage stew recipe that delivers a hearty dinner with minimal prep time. The dish, which serves two, is packed with flavour and vegetables, and comes from his latest book and television programme.

In the TV show, the chef cooks in a single unedited take in real time, demonstrating that a wholesome meal can be prepared in just 20 minutes. The stew is one of the recipes featured.

Ingredients for the stew

The recipe uses olive oil, one 150g skinless free-range chicken breast, two rashers of higher-welfare smoked pancetta, two higher-welfare sausages (130g), a 400g tin of cherry tomatoes, a 400g tin of borlotti beans, red wine vinegar, 160g purple sprouting broccoli, half a bunch of rosemary (10g), two cloves of garlic, one lemon, extra virgin olive oil, and two large slices of sourdough bread (100g each).

How to cook the dish

Set the grill to high and place a large shallow casserole pan over high heat with one tablespoon of olive oil. Cut the chicken into six equal pieces and halve the pancetta and sausages, adding everything to the pan as you go. Cook for nine minutes, stirring occasionally, until golden brown.

Tip the tomatoes into the pan, then add the beans, juice and one tablespoon of red wine vinegar. Bring to the boil, then trim and add the broccoli, halving any thicker stems lengthways. Leave to simmer while you make the topping.

Strip the rosemary into a pestle and mortar and pound with a small pinch of sea salt, then peel and bash the garlic. Finely grate the lemon zest, then combine with half the juice and two tablespoons of extra-virgin olive oil, seasoning to taste. Tear the bread into bite-sized pieces and scrunch together with the mixture.

Finishing and serving

Season the stew to taste, then scatter the herby dressed bread across the top. Carefully transfer to the grill for five minutes, or until golden, bubbling and cooked through, then serve alongside lemon wedges for squeezing over.
