Brin Pirathapan, the 2024 MasterChef champion, declares he is "probably a much nicer person" since abandoning his demanding career as a veterinarian to embrace cooking full-time. The 31-year-old chef and content creator, who now boasts over 200,000 Instagram followers, reflects on his journey from stressful 13-hour shifts in Bristol to finding solace and creativity in the kitchen.

Finding Release Through Food

As a vet, Pirathapan endured "bloody stressful" days, constantly anticipating weekends or brief lunch breaks to enjoy leftovers. Cooking became his essential escape, a way to decompress after grueling work. "I remember doing these 13-hour shifts and coming home decompressing by cooking," he shares. His immediate resignation after filming MasterChef's 20th series marked the beginning of a new chapter, allowing him to "realise the potential that my happiness and contentment has."

Elevating Everyday Ingredients

Pirathapan's debut cookbook, Elevate, focuses on transforming humble, accessible ingredients into extraordinary dishes. Inspired by his university days of budget cooking, he champions the idea that vibrant, delicious meals need not rely on gourmet produce. "I want everyone to know that whatever background you're from... with the most basic ingredients, you can still create really vibrant, delicious food," he asserts, cautioning against elitism in culinary culture.

Tamil Sri Lankan Heritage and Global Fusion

While Tamil cuisine deeply influences his cooking, Pirathapan avoids geographical restrictions, blending flavours from his British upbringing and global travels. He describes Tamil food as "quite rich, quite deep" and spicier than some Northern Indian counterparts, noting its mastery in balancing diverse dishes on a single plate. "I just love flavour – flavour that is bold from all over the world," he explains, showcasing eclectic recipes like mutton rolls, duck leg lasagne, and Brazilian fish stew.

The Therapeutic Power of Cooking

Pirathapan highlights cooking's meditative benefits, particularly for stressful days. Preparing a curry, he says, is "very meditative" akin to a breathing exercise, culminating in a comforting dish. He believes colourful, playful recipes can uplift moods, offering a respite in challenging times. "If you get a recipe that's bright, enjoyable and playful, I like to think we can change a lot of things," he adds, emphasising food's emotional impact.
