The secret to elevating the dish, according to Clarke, is a splash of apple cider vinegar. 'Cabbage yearns for acidity,' she explains, and just half a tablespoon of vinegar 'completely transforms' the cabbage, bringing it to life. The other ingredients are olive oil, butter, salt, and pepper.

To make the dish, cabbage is thinly sliced into ribbons, then pan-fried in olive oil and butter over medium-high heat for 10 to 15 minutes until tender and caramelised. After removing from heat, apple cider vinegar is stirred in, with additional seasoning to taste.
