Recipe Developer Reveals Secret for Perfectly Crispy Jacket Potatoes
Jacket potatoes are a cherished British staple, often chosen for their simplicity and comforting appeal. However, a recipe developer has introduced a clever twist that elevates this classic dish, promising exceptionally crispy skins and a delectably oozy centre.
Innovative Twist on a Classic Comfort Food
Amy Sheppard, a recipe developer and TikTok creator, has shared her inventive take on the traditional jacket potato, claiming it has "completely changed their minds" among those who find the dish mundane. Her secret lies in using a ready-made cheese spread, which not only infuses the potatoes with rich flavour but also creates an irresistible melt-in-the-middle texture.
In a recent video, Amy explained, "I honestly don't think that there's a dinner better than jacket potato cheese and beans, but my lot think it's a bit boring, so I turned it into the cheesiest, ooziest jacket potato bake." She emphasised that this version retains all the joy of a simple crispy jacket potato while adding a thick cheesy sauce and smoky bacon baked beans, topped with golden, toasted cheddar cheese.
Versatile Cooking Method and Popular Reception
Amy highlighted that the dish works excellently in an air fryer, provided the basket is large enough, making it a convenient option for quick meals. She stressed that her cooking style isn't "fancy," positioning this recipe as an ideal choice for an easy family tea during the winter months.
The video has garnered significant attention, accumulating over 1.2 million views, 64,000 likes, and 370 comments. Fans have praised the recipe, with one user, Charlotte, commenting, "That with loads of coleslaw would literally be my death row meal." Others suggested variations, such as Emmie who proposed, "This would be amazing with tuna beans and cheese as well," and Herbie who recommended adding garlic butter, chilli con carne, grated cheese, sour cream, and guacamole.
Step-by-Step Recipe for Jacket Potato Cheese & Bean Bake
For those craving a comforting yet innovative meal, here is how to prepare Amy's recipe at home, designed to serve four people.
Ingredients:- Four large jacket potatoes
- Olive oil for roasting
- Seven rashers of smoked streaky bacon
- Two x 400g tins of baked beans
- 125g mature cheese spread
- 25ml milk
- Butter
- 80g grated cheddar cheese
- Salt and ground black pepper
- Preheat the oven to 200°C (fan). Place the jacket potatoes in an ovenproof dish measuring approximately 23cm x 23cm.
- Prick the potatoes all over with a fork, massage them with olive oil, and sprinkle generously with salt. Bake for about one hour or until fully cooked.
- While the potatoes are baking, chop the bacon into 2-3cm chunks. Heat a drizzle of oil in a frying pan and cook the bacon until crispy.
- Add the baked beans to the pan five minutes before the potatoes are done, warming them through gently.
- Blend the mature cheese spread and milk until smooth, seasoning with salt and pepper.
- Once the potatoes are ready, remove them from the oven and cut a deep cross in each. Squeeze the edges to push the flesh out slightly.
- Add a knob of butter to each potato and use a fork to mix it through, fluffing the flesh up to the skin. Then, add a dollop of the cheese sauce to each potato.
- Top the potatoes with the beans, ensuring they cover the edges so no potato is visible. Sprinkle with grated cheddar cheese.
- Grill on medium heat for about five minutes, until the cheese is golden brown. Serve each loaded potato with salad or vegetables.
This recipe offers a delightful way to enjoy jacket potatoes with enhanced crispiness and flavour, perfect for winter comfort food.
