One kitchen staple adds rich butter flavour to avocado toast

Avocado toast is my favourite summer breakfast because it comes together quickly, but it used to taste bland to me. Avocados are unusual fruits – they are not sweet or tart, and their creamy texture is the result of healthy fats that can make them taste heavy on their own. I tried adding herbs and spices, but nothing seemed to help until I found the simplest solution: lemon juice.

Why lemon juice transforms avocado

Lemon juice is acidic, and that acidity cuts through the fat in avocado, allowing its natural flavour to come through. The result is a fresh, buttery and slightly nutty taste that makes avocado toast far more enjoyable. Since I have started doing this, I eat avocado toast several times a week, and I no longer feel the need to add sauces or extra toppings.

How to make lemon avocado toast

This recipe needs one ripe avocado, two slices of bread, two teaspoons of lemon juice, one teaspoon of olive oil, and salt and pepper. Optional seasonings include red pepper flakes, smoked paprika or garlic powder.

Begin with a ripe avocado – it will spread easily and is less likely to tear the bread. Slice the avocado in half, put one half in a bowl, and add the lemon juice, olive oil, salt and pepper. Mash the mixture with a fork until it reaches a smooth consistency. Toast the bread until golden and crisp, then spread the avocado evenly over the toast.

The lemon juice is all it takes to make the avocado richer and more refreshing. You can add extra seasonings if you like, but they are not essential – the lemon does the work.
