Roast potatoes are a Sunday dinner staple, but the traditional oven method can be time-consuming. MasterChef UK champion Shelina Permalloo has shared an air fryer recipe that cuts the process to just 40 minutes, without the need for parboiling or preheating fat.
The recipe requires only three ingredients: potatoes, oil, and salt. Optional additions include thyme and garlic for extra flavour. The key innovation is a 10-minute microwave blast at 800W to steam the potatoes, replacing the parboiling step.
After microwaving, the potatoes are transferred to the air fryer, drizzled with oil and seasoning, and cooked at 180°C for 30 minutes. Shelina advises not to overcrowd the microwave dish or the air fryer basket to ensure proper steaming and crispiness.
The result is golden, crunchy potatoes with a fluffy interior. The recipe has been praised by followers for its simplicity and consistent results. One fan said: "I made this once and I have been making it every night for the past two weeks. This is the absolute best recipe."
