Ingredients:
- Potato topping: 1kg peeled main crop potatoes, cubed; knob of butter; splash of milk; salt and pepper; 50g Gruyère cheese, grated
- Fish filling: 75g butter; two leeks, sliced; 75g plain flour; 150ml white wine (or cider/milk); one pint milk; two tbsp chopped parsley; 750g mixture of salmon, smoked haddock, and fresh haddock, skinned and cubed; six free-range eggs, hard-boiled, peeled, and quartered
Method:
- Preheat the oven to 200°C/180°C Fan/Gas 6.
- Boil potatoes in salted water until tender, then mash with butter, milk, and seasoning.
- Melt butter in a saucepan, add leeks, cover, and simmer for 10 minutes until soft.
- Whisk flour with wine, cider, or milk until smooth, then add to leeks with milk, bring to boil, and stir until thickened.
- Season, add parsley and fish, stir for two minutes, then spoon into a casserole dish with eggs and cool until firm.
- Top with mashed potatoes, mark with a fork, sprinkle with cheese, and bake for 30-40 minutes until golden-brown.
