Lidl has introduced Wellness Wednesdays for Lidl Plus users, offering 10% off products in the Live Well range every Wednesday. As part of the initiative, the supermarket teamed up with chef Miguel Barclay, creator of the One Pound Meals series, to create seven recipes costing £1 or less per serving.
Nearly 45% of Brits say cost makes it harder to make healthier food choices, according to Lidl. The recipes are inspired by the Planetary Health Diet, a flexible guide developed by scientists to optimise health and sustainability. They encourage small, easy swaps such as adding beans, pulses, or lentils to increase plant-based protein, incorporating more fruit and vegetables, and choosing one wholegrain daily.
Wellness Wednesdays Initiative
The recipes highlight how easy it is to create balanced meals without spending a fortune. One example is the Chicken Kra Pow stir fry with Cauliflower Rice, which contains 23.8g of protein and comes in at under 300 calories. The other six recipes include a Beef & Lentil Hotpot (98p), a Creamy Leek, Courgette & Bean Cassoulet (74p), and Charred Sweetcorn & Sliced Pork Ramen (93p).
Chicken Kra Pow & Cauliflower Rice Recipe

Ingredients:
¼ cauliflower (from Live Well range), 2 x 5ml sesame oil, 80g chicken drum fillets (finely chopped), 1 garlic clove (finely diced), ½ fresh red chilli (sliced), 17g green beans (quartered), 7g fresh basil, 5ml soy sauce, 2 pinches salt, 1 pinch pepper
Method: Blitz cauliflower in a food processor until it resembles rice. Pan fry in a splash of sesame oil over medium heat for about 8 minutes until tender. Meanwhile, chop chicken into small pieces, season with salt and pepper, then pan fry with garlic, chilli, and green beans in sesame oil over medium heat for about 10 minutes until cooked through. Add basil and soy sauce for the last 30 seconds of cooking. Serve with cauliflower rice.
