Lettuce Storage Trick Keeps It Fresh for Four Weeks

A simple kitchen hack using aluminium foil can keep lettuce fresh for up to four weeks, according to chef Charles Kim, known as Chef Fatty on TikTok. The method, which involves loosely wrapping the lettuce in foil, has been tested and confirmed by food specialists at All Recipes.

How the trick works

Chef Fatty demonstrated the technique in a May video, showing lettuce that was almost four weeks old and still crisp. He advised washing the lettuce if dirty, ensuring it is completely dry, and removing any yellowing or rotting leaves before wrapping it loosely in aluminium foil.

He explained: "Aluminium foil works because it's loosely packed, allowing for gases and moisture to escape. It's also not see through, which means light can't enter it."

Testing the method

All Recipes tested various storage methods for lettuce, comparing foil wrapping with plastic bags. The romaine heart in its original packaging lasted only two to three weeks with significant trimming, while the foil-wrapped heart lasted beyond 30 days. The foil method only failed if the lettuce wasn't wrapped back up tightly enough after each use.

Michael Nestrud, who holds a PhD in Food and Sensory Science and a culinary qualification from the Culinary Institute of America, noted: "The biggest issue that happens with lettuce is that it either dries out or it gets wilted. Sealing in a Ziploc chokes it because it needs CO2 to live, and the Ziploc will eventually have only oxygen. Leaving it open in your fridge with no cover will dry it out."

Why foil works

While there is no specific scientific explanation for the foil's effectiveness, it allows the lettuce to breathe better than a sealed container. Nestrud clarified: "Aluminium does not, on its own, have any specific synergies with lettuce. If it's protective, it's either protecting it from drying out or it has just the right permeability to allow the lettuce to breathe without drying it out (aluminium foil IS permeable)."
