This Easter weekend, roast lamb traditionally takes centre stage on British dinner tables, with celebrity chefs offering their expert guidance on perfecting this classic dish. Among them, James Martin has shared an unconventional yet effective ingredient that promises to elevate the flavour of your roast lamb significantly.
James Martin's Lavender and Garlic Technique
In a detailed video tutorial for Food Network UK, James Martin demonstrated his unique preparation method for roast lamb. The renowned chef began by making several small holes in the lamb joint before inserting two key ingredients: garlic and fresh lavender. Martin explained that lamb's robust flavour profile requires equally strong accompanying flavours, making this aromatic combination ideal.
How to Properly Use Lavender
Martin provided specific instructions for incorporating lavender into the dish. "If you grow this in your garden, and you're going to do this dish, snip off the little purple heads before placing it into the lamb," he advised. The chef emphasised using lavender sprigs before they flower, trimming the purple tops and inserting the springs into each hole alongside garlic cloves.
"It's quite strong is lavender so you only need a little bit," Martin cautioned. "Just place a sprig of the lavender inside each hole where you've put the garlic. Make sure it's nice and compact and you've got this lovely combination of garlic and lavender." Despite lavender seeming an unusual choice for meat preparation, Martin assured viewers it "worked perfectly" with lamb.
Alternative Roast Lamb Approaches
While Martin champions his lavender-infused method, other culinary experts offer different approaches to Easter lamb. TikTok creator John Gregory-Smith presents an alternative recipe featuring lemon, garlic, rosemary, salt, and pepper. Like Martin, Gregory-Smith creates holes in the lamb before seasoning, then covers it loosely with baking paper and tinfoil for slow cooking.
"This time I have a full-on feast for you, starting off with slow-cooked lamb that you pull apart and serve with lashings of gravy," Gregory-Smith explained in his popular video, which has accumulated over 15,000 views. "I'm going to show you how to make the ultimate slow-cooked roast lamb for the Easter weekend. Flavoursome butter with lemon, garlic, rosemary and plenty of salt and pepper." His method involves slow-cooking the lamb for four hours before adding lemon butter.
Rising Costs of Easter Roasts
As Britons prepare their Easter meals, they face increasing costs for traditional ingredients. According to analysis from the Energy and Climate Intelligence Unit (ECIU) think tank, UK households have experienced additional expenses over the past three years. A food and farming analyst from the organisation told the Independent that lamb prices have soared dramatically due to challenging agricultural conditions.
"Lamb prices are through the roof after droughts, extreme heat and heavy rainfall have hit farmers' costs of production," the analyst explained. "These weather extremes have weakened grass growth and prevented depleted hay stores from recovering properly." This economic context makes expert cooking advice particularly valuable for maximising flavour while managing household budgets.
With multiple approaches available from culinary professionals, home cooks have various options for creating memorable Easter meals. James Martin continues to share his expertise on television, appearing on James Martin's Saturday Morning on ITV, where viewers can discover more of his innovative cooking techniques.
