Bestselling cookbook author Clare Andrews has named the one air fryer recipe she makes every week: a fiery twist on chilli con carne, served as meatballs. The dish, featured in her latest publication 'The Ultimate Air Fryer Cookbook: 15-Minute Feasts', is described as a weeknight essential in her household.
Andrews, who has developed hundreds of air fryer recipes, said: "I've been cooking this dish for my family for years. These scrummy air-fried chilli con carne meatballs blend the rich, smoky flavours of traditional chilli con carne with the satisfying bite of tender, juicy meatballs. This recipe is both hearty and hassle-free, thanks to the air fryer, and a perfect midweek staple in our house."
The recipe serves two people and requires just 10 minutes of preparation. Cooks are advised to preheat the air fryer to 200°C for three minutes, combine mince with spices and seasonings, and shape into approximately 12 bite-sized meatballs. After lightly spraying with oil, the meatballs are cooked for three to five minutes until golden, with a shake halfway through.
For the sauce, ingredients are blended until smooth, then poured over the meatballs with kidney beans and cooked for a further eight to ten minutes until thickened. The dish is served with rice, soured cream, fresh coriander, grated cheddar, jalapeños and avocado, if desired. Andrews also suggests preparing the meatballs and sauce the night before to make dinners even easier, adding: "Honestly, they are so addictive, you'll be making these every week like me!"
