Nutritionist Em The Nutritionist has shared a recipe that swaps toast for sweet potato slices, creating a healthier and more filling version of beans on toast. The dish, which she posted on Instagram, is described as "so good" and takes under 10 minutes to prepare.
Why sweet potato beats toast
Sweet potatoes are more nutritious and satiating than toast, according to the nutritionist. They are packed with essential vitamins and help you feel rejuvenated rather than tired after lunch. The recipe combines sweet potato with butterbeans, hummus, and feta for a balanced meal.
The recipe
To make the dish, cut a small sweet potato into two 1cm slices, rub with olive oil and salt, then bake at 200C fan for 15 minutes or air fry at 190C for 10 minutes. While cooking, sauté 100g drained butterbeans with a grated garlic clove and a teaspoon of sun-dried tomato puree for three minutes, finishing with a squeeze of lemon juice.
Once the sweet potatoes are ready, spread a teaspoon of hummus on each slice, top with the butterbean mixture, and add crumbled feta, fresh basil, and spring onion.
