Former Great British Bake Off contestant Rowan Claughton has shared a simple trick to elevate homemade chocolate chip cookies: infusing brown butter with instant espresso. In a TikTok video, Claughton demonstrated his recipe, which relies on coffee to intensify flavour.
Claughton, known for his passion for espresso during his time on the show, explained that browning the butter creates a nutty depth before stirring in instant coffee granules. The mixture is then strained to remove granules, leaving behind a richly flavoured butter.
“These are beautiful cookies, they are delish,” Claughton said in the video, which has garnered over 1,900 views and 273 likes. One commenter, Hannah Jo, praised the result: “Loved these, so tasty and salty!”
To make the cookies, place butter in a pan over low heat until milk solids turn golden brown. Cool slightly, then stir in 30g instant espresso granules for two minutes before straining. Combine the infused butter with sugar, vanilla extract, and egg, then fold in flour and baking powder. Add 150g chocolate and divide the dough into 12 balls, pressing extra chocolate on top. Bake for 11 minutes and scatter sea salt while warm.
