The recipe, shared by Eating Well, promises a Cucumber-Avocado Sandwich that "is cool, creamy and quietly bold." The food expert said: "This creamy, crunchy sandwich layers salty feta, crisp cucumber and silky avocado between slices of whole-wheat toast."

"A simple yoghurt-feta spread adds richness and tang, while spinach and red onion bring freshness and bite, perfect for a quick lunch," they added.

Ingredients and method

To make the dish, you will need one cup of finely crumbled feta cheese, half a cup of Greek-style yogurt, one tablespoon of extra-virgin olive oil, eight slices of whole-wheat bread, one medium English cucumber, one medium avocado, a quarter teaspoon of salt, one cup of baby spinach and a third of a cup of thinly sliced red onion.

Combine the feta, yoghurt and oil in a medium bowl, then mash with the back of a fork or a potato masher until creamy and smooth. Spread about two tablespoons of the mixture over one side of each toast slice, then arrange the cucumber and avocado over four slices. Sprinkle the avocado with the salt, top with spinach and onion rings, place the remaining toast slices on top and press lightly. Serve immediately.
