Guardian cooks have compiled a collection of delicious one-pot traybake recipes, perfect for lockdown cooking. These dishes require minimal prep and are endlessly adaptable, allowing home cooks to swap ingredients based on availability.
For a green split pea traybake, Kitchen Aide suggests using yellow or red split peas instead of green, and substituting honey or agave nectar for maple syrup. Fresh parsley can replace coriander, and the jalapeño can be omitted or swapped for paprika for a milder flavour.
A pasta traybake with oyster mushrooms can be made with shiitake mushrooms instead, and paccheri can be replaced with tortiglioni or rigatoni. Beef mince can stand in for pork if needed.
For a potato and gruyère bake, any good all-rounder potato like estima or vivaldi works. Gruyère can be swapped for comté, beaufort, or emmental, and ricotta can be replaced with fromage frais or cottage cheese.
Other recipes include a mustard seed and spinach traybake, where black mustard seeds can be replaced with yellow seeds or mustard powder; a harissa white bean dish that works with any tinned white beans; and a turnip traybake that can be made with carrots, potatoes, or squash.
