Professional chef Frank Proto has shared his hack for perfectly crispy fried eggs, revealing that the key ingredient is butter—and it's already in your kitchen.

While everyone has their own method for preparing this breakfast staple, Proto explains that adding butter at specific moments is essential for the best outcome. In a tutorial on his YouTube channel, he emphasizes that the first step is ensuring your frying pan reaches the right temperature and stays controlled during cooking.
How to Use Butter
After the pan is properly heated, Proto suggests adding just enough butter to "grease up" the pan. Once the eggs have cooked briefly, the most critical part begins. He says: "Then I'm going to put a big knob of butter in here for basting. At this point, the white is nice and set around the yolk, I'm going to take my butter and baste it around."
After adding knobs of butter around the egg white—taking care to avoid the yolk—he waits for them to caramelize before serving. This method ensures a crunchier, more flavorful breakfast or brunch.
Science Behind the Technique
Proto stresses the importance of understanding food science: "Part of the learning of cooking is learning the science of it." By basting with butter, the eggs achieve a superior texture and taste.
In another clip by Chef Brian's Kitchen, a similar trick for scrambled eggs involves mixing mayonnaise into the dish. Proto explains that homemade mayonnaise is just egg yolks emulsified with oil, resulting in an "unbelievable soft scramble like no other."
