Traditionally, spreading mayonnaise on the exterior of a cheese toastie yields a golden, savoury finish. However, a recent recipe suggests using honey butter instead. The combination of sweet honey and rich butter creates a caramelised crust with a delightful crunch, while complementing the saltiness of the cheese.
Why It Works
The honey butter adds a sweet, buttery richness that balances the savoury cheese. Using a mix of mozzarella and cheddar produces an oozy, gooey filling. For an even saltier kick, try feta or goat's cheese.

Ingredients
- 4 slices of bread (sourdough or any sandwich bread)
- Your choice of cheese (cheddar and mozzarella recommended)
- 50g softened butter
- 20g granulated sugar
- 20g brown sugar
- 25g honey
Method
- In a small bowl, mix butter, both sugars, and honey to create the spread.
- Assemble your cheese sandwiches. Optionally, butter the inside of the bread before adding cheese.
- Coat the outside of each sandwich generously with the honey butter.
- Heat a non-stick frying pan over medium-low heat.
- Toast the sandwiches until golden and caramelised on both sides, ensuring the cheese melts to your liking.
- Remove from pan, cut in half, and serve.
