According to Embree, the acidity from the pickle juice brightens the dish and complements the creamy dressing.

Why Pickle Juice Works

Embree explains that the vinegar in pickle juice provides a sharp burst of acidity, which brings out other flavors in the salad. She suggests drizzling 45ml of pickle juice over the salad before mixing. For extra zing, she advises adding more pickle juice a tablespoon at a time until satisfied.

"I have a secret ingredient in potato salad. Pickle juice. I know. It sounds weird, but trust me. It's the bomb in the bomb-diggety for this delicious potato salad," Embree said.

Recipe Details

The recipe calls for 680g of potatoes, one red onion, 50g of thinly sliced celery, 112g of minced pickles, 267g of mayonnaise, one tablespoon of mustard, and 45ml of pickle juice. The potatoes are boiled until tender, cooled, then mixed with the vegetables and dressing. The salad should be chilled before serving and stays fresh for several days.

Embree emphasizes that the potatoes must be thoroughly cooled before mixing to avoid a mashed texture. "If you attempt to mix them into the salad while warm, they'll turn into mashed potatoes," she noted.
