Grand Designs presenter Kevin McCloud has shared his secret for achieving the perfect Yorkshire pudding rise, swapping out traditional olive oil for a surprising alternative: coconut oil. During an appearance on the Dish from Waitrose podcast, McCloud told hosts chef Angela Hartnett and DJ Nick Grimshaw that he doesn't follow the conventional approach of using a neutral oil or olive oil when preparing the batter.
Coconut Oil for a Better Rise
Kevin said coconut oil gives Yorkshire puddings the best rise. In a recent clip posted to TikTok, Nick said: "You told us you make a great Yorkshire pudding. What is your... what is your method? Cause it can be hit and miss, people get it wrong, there's a lot of trickiness with it, and I think once you get it, you get it."
Kevin replied: "Yeah. Well, so... It's been a contention in my household, but I like to cook with a bit of coconut oil, high temperature and all that. I find it gives a good rise on the Yorkie."
More Eggs and High Heat
He also mentioned that he incorporates plenty of eggs in his batter. Kevin continued: "And... lots of eggs. A lot more eggs than you think." The television presenter clarified he typically uses four eggs in his mixture. When working with coconut oil, Kevin explained he attempts to heat it until it's incredibly hot and smoky.
Angela Hartnett's Tips
Angela endorsed Kevin's technique, noting that home cooks should prepare the batter the day before cooking to give it time to rest, just as she does in her own restaurant. She said: "But other than that, it's about hot temperature, hot oil, whatever you're using... and as you say, in and close the door."
Angela urged cooks to resist opening the oven door at any point while the Yorkshire puddings are cooking, warning that allowing heat to escape will cause the Yorkies to deflate.
