The Method
Tracy Tips explains that the process begins with a cardboard box lined with dry paper, such as kitchen towel, to absorb excess moisture and protect the potato surface. Then, potatoes are layered with kitchen towel between them, and a layer of baking powder is sprinkled over the surface. Tracy notes: 'Using baking soda helps absorb moisture effectively and limits sprouting.' Once the box is full, another layer of tissue paper is added, the lid is sealed, and the box is stored away from direct sunlight and moisture.
Storage Duration and Signs of Freshness
While Tracy claims this method can keep potatoes fresh for up to 12 months, raw potatoes typically last from one week to several months depending on storage conditions. Cooked frozen potatoes can be stored for up to a year. Signs of spoilage include softness and sprouting. Fresh potatoes are firm with taut skin and free from marks or bruises.
