Why Cabbage Gets a Bad Rap
The humble vegetable's reputation stems from its strong odor, bland taste, and tendency to become soggy when overcooked. However, proper technique can elevate it into a mouthwatering meal. Brown's recipe avoids boiling and instead focuses on caramelization.
The Recipe: Sautéed Caramelized Cabbage
Ingredients:
- One large green cabbage (heavy for its size with tightly packed leaves)
- One onion
- A few garlic cloves, to taste
- Ghee or a combination of butter and oil
Brown notes, "Some like to mix butter and oil to raise the smoke point, but honestly, ghee does the job perfectly on its own—it's stable at high heat and brings a delicious buttery taste."
Method:
- Heat a pan to medium-high heat. Add ghee (or butter and oil) and sauté onions for about a minute until softened. Add garlic and cook until fragrant.
- Add cabbage and cook for 12 to 15 minutes, stirring occasionally, until softened and caramelized.
- Season with salt and pepper to taste before serving.
How to Serve
This sautéed cabbage pairs well with chicken, lamb chops, or shepherd's pie. It can also be a complete one-pan dish with shredded meat or part of a hearty breakfast.
