Adding ground flaxseed to homemade burger mixtures can keep them extra juicy, according to Lily Keeling, senior recipe development manager at Green Chef. The ingredient costs about 12p per serving.
How Flaxseed Works
Flaxseed absorbs and retains several times its weight in moisture, preventing burgers from drying out on the grill. Keeling recommends one and a half tablespoons per 500g of mince, enough for four burgers, to avoid affecting taste or texture.
Affordable and Accessible
A 150g bag from Tesco costs £1.70, providing roughly 14 servings at 12p each. Keeling noted that the flavour is barely noticeable when used in small amounts.
Michelin-Starred Chef Tips
Earlier this month, Michelin-starred chef Tom Shepherd shared advice for perfect burgers. He recommends 100% beef mince with 25% fat, either from minced beef fat or by chopping sirloin or ribeye steak. Sear both sides for an even crust and let the burger rest before and after cooking.
