A former Great British Bake Off contestant has shared a simple ingredient swap to make perfect scones without eggs or butter. Briony May Williams replaced these traditional ingredients with lemon curd in her latest TikTok video.

Williams, continuing her alphabet-themed baking series, experimented with ingredients beginning with the letter 'L'. She used lemon curd to create sweet scones, eliminating the need for butter and eggs. In the video, she said: “If these work, they’re gonna be so delicious.”

The dough is made by mixing self-raising flour, lemon curd, and salt together. Williams chose a lemon curd with a generous amount of butter to compensate for the lack of added butter. After forming the dough into a ball and cutting it into quarters, she brushed the tops with milk to create a shine when baked.

Baking and Results

The scones are baked in an air fryer at 180°C for six to eight minutes or in an oven at 180°C fan for 10-12 minutes. Once cooked, Williams glazed them with more lemon curd and lemon zest. She commented: “Oh my goodness! I think these might be the best ones so far.”

Describing the texture, she said: “They’re really crunchy on the outside and then inside they’re really soft and fluffy… they really do taste like lemon curd. They are delish. Lemon curd definitely scones.”

The video has garnered over 4,792 views, 458 likes, and 41 comments. Viewers suggested variations, such as adding lemon curd swirls through the dough or blueberries. The full recipe includes 200g self-raising flour (or 200g plain flour plus one tsp baking powder), 150g lemon curd, half a tsp salt, and one tbsp milk.
