Why oven baking outperforms frying
Frying sausages in a pan is quick, but it often leads to burning, sticking, and oil splattering, creating a larger mess to clear up afterwards. It can also produce sausages that are burnt on the exterior yet raw and pink in the centre, with an unappealing texture and fairly tasteless flavour.
By contrast, baking sausages in the oven produces superior outcomes because the milder heat enables the fat to render slowly, guaranteeing they cook uniformly. The butchers argue that oven preparation achieves "juicy" and "mouth-watering flavour" you cannot accomplish through frying.
How to cook sausages in the oven
This straightforward technique works for pork sausages, beef sausages, Cumberland sausages, chipolatas and most traditional butcher's varieties. Begin by preheating the oven to 200°C/180°C Fan/Gas Mark 6 and arrange the sausages on a baking tray, which can be lined with foil or baking parchment to simplify cleaning afterwards.
If the sausages are particularly lean, add a light drizzle of oil. Most conventional sausages contain sufficient fat and require little additional oil. Position the tray in the oven and cook for 25 to 30 minutes, flipping the sausages at the halfway point to ensure even browning.
