Mary Berry's All-in-One Sausage Traybake: A Quick and Easy Family Favorite
Mary Berry has shared numerous one-pan dishes throughout her career, and they remain some of her most popular recipes. Not only do they minimize washing up, but they also require minimal preparation time, making them ideal for busy weeknights. This roasted sausage and potato supper is exceptionally simple and cooks in under an hour.
The recipe notes state: "Mary's sausage traybake will become a firm family favourite as it can be cooked in one dish and is so quick and easy to put together. Ingredients
- Two tablespoons of olive oil
- Two large onions, sliced lengthways into wedges
- Two red peppers, deseeded and diced
- Two garlic cloves, chopped
- One tablespoon of chopped fresh thyme leaves
- 500g baby new potatoes, halved
- 12 sausages, pricked with a fork
- 200ml white wine
- Salt and freshly ground black pepper
Method
- Preheat the oven to 220°C (200°C Fan). Place all ingredients except the wine in a large, resealable freezer bag. Seal the bag shut and shake well to coat everything in the oil. Alternatively, put everything in a large bowl and toss until fully coated.
- Tip into a large roasting tin, spreading the ingredients in one even layer. Ensure the sausages are not covered by the vegetables. Season well with salt and pepper, then roast for 30 to 35 minutes until golden brown.
- Remove from the oven, turn the sausages over, and toss the vegetables in the cooking juices. Pour in the white wine and return to the oven for another 20 minutes until browned and the sausages are cooked. For young children, replace the wine with stock if preferred.
- Serve immediately with a dollop of mustard on the side, if desired.
