Spicy Honey Sriracha Carrots: The Perfect Roast Side Dish
Honey Sriracha Carrots: Perfect Roast Side Dish Recipe

Roast dinners are back on the menu as the weather cools, but the key to elevating a good roast to a great one lies in the side dishes. While boiling or steaming vegetables is acceptable, one recipe for carrots is described as incredibly delicious and worth swearing by.

A Non-Traditional Carrot Recipe That Converts Skeptics

The recipe, which is not traditional, initially horrified the writer's British boyfriend when she first explained her plan. However, he has since become a complete convert to these roasted carrots. They are described as sweet, spicy, and packed with herby garlicky flavour, yet super simple to prepare and taste as if hours of effort were invested.

The writer usually adjusts the ratios based on the number of people she is cooking for, but recommends a precise recipe from Something Nutritious for those who prefer exact measurements.

Ingredients for Honey Sriracha Carrots

To try the recipe, you will need 900g of peeled carrots, a quarter cup of olive oil, one teaspoon of garlic powder, half a teaspoon of paprika, salt and pepper to taste, and fresh parsley or coriander for garnish. For the sauce, you will need two tablespoons of butter, three tablespoons of honey, two tablespoons of sriracha, and two cloves of crushed garlic.

Method: Roasting and Glazing

Preheat the oven to 200°C and slice the carrots into two-inch chunks. Toss the carrots with the oil, garlic powder, paprika, salt, and pepper, then place them in a roasting tray. Bake for 25 minutes, flip them, and bake for a further 10 minutes.

While the carrots bake, melt the butter in a medium saucepan and add the garlic. Sauté over medium heat until fragrant, then add the sriracha, honey, and a pinch of salt. Lower the heat and stir until combined.

Once the carrots have baked, toss the sauce over them to ensure they are all covered, then garnish with the fresh herbs and serve immediately.
