Mary Berry's delicious Caesar salad recipe can be prepared in just 10 minutes, making it a perfect choice for a quick lunch or dinner during warmer months. The homemade Caesar salad dressing requires only six simple ingredients, and the croutons are made from leftover stale bread.
Ingredients for Four to Six People
For the Salad
- Three tablespoons of olive oil
- Two slices of day-old white bread, crusts removed, cubed
- One romaine lettuce heart, sliced
- 30g Parmesan cheese, shaved
- Salt and freshly ground black pepper
For the Dressing
- Six tablespoons of light mayonnaise
- One and a half tablespoons of Dijon mustard
- Two tablespoons of grated Parmesan cheese
- Half a garlic clove, crushed
- A few drops of Worcestershire sauce
Method
Heat the olive oil in a non-stick frying pan, add the bread and fry over a high heat for three to four minutes until golden brown. Remove with a slotted spoon, transfer to a bowl and season with salt and pepper.
Put all the dressing ingredients in a bowl and beat together until smooth with one to two tablespoons of water.
Toss the romaine lettuce with the dressing, then scatter with the toasted croutons and grated Parmesan.
The recipe notes stated: "The croutons can be made in advance and stored in an airtight container for two days." The dressing will keep for two to three days in a sealed container in the fridge.
