Celebrity chef Gordon Ramsay has shared a straightforward technique that he claims will give sausages "more flavour". In a YouTube video, Ramsay recommended simply slicing sausages lengthwise and removing the casing before cooking.
"The secret to making great food is locking in every last ounce of flavour in that pan," Ramsay said. He explained that piercing the skin allows the spicy sausage meat to be released, resulting in a stronger taste. "You get more flavour from the sausage when you take them out the casing."
How to Prepare Sausages Ramsay's Way
Using a sharp knife, cut along the length of each sausage and remove the casing. Then cook the sausages as normal in a frying pan. Ramsay added: "This way, you get so much more bang for your buck with sausages with the skins off. The real flavour of that spicy Italian sausage is going to come through." He noted that any type of flavoured sausage would benefit from this hack.
Choosing the Right Sausage Variety
In the same video, Ramsay also recommended using a variety of sausages for different meals. He said: "A simple meaty staple that is perfect for quick, easy suppers with a difference are exotic, regional sausages that have such distinctive tastes that are a million miles from the Great British banger."
He suggested chorizo for stews and paellas, merguez for tagines or with couscous, Italian fennel sausages for pasta or pizza, and Jamaican jerk sausages for casseroles or with onions and garlic. Ramsay believes that choosing different varieties can add "extra flavour with ease" and that spending wisely can lead to amazing midweek meals that don't cost the earth.
