Simple and Delicious Honey Chicken
After a lengthy day at the office, the last thing you want is a complicated dinner. Mary Berry's honey chicken recipe is straightforward and uses the oven for most of the work, making it a perfect midweek meal.
This recipe, featured in Mary Berry's cookbook 'Classic', takes 35 minutes to prepare and 40 minutes to cook, serving up to three people. The dish features tender chicken with a barbecue-style charred appearance and flavour.
Ingredients
- Six chicken legs (skin on)
- Six tablespoons of tomato ketchup
- Two tablespoons of tomato purée
- Two tablespoons of wholegrain mustard
- Three tablespoons of Worcestershire sauce
- Two tablespoons of runny honey
- One garlic clove, crushed
Method
- Score the chicken legs several times with a sharp knife to allow the marinade to penetrate.
- Mix all marinade ingredients in a large bowl, then add the chicken legs and coat generously. Massage the marinade into the chicken with your hands.
- Cover and refrigerate for at least 30 minutes.
- Preheat oven to 220C (200C fan or Gas 7) and line a roasting tin with baking paper.
- Place chicken legs in a single layer in the tin, spoon over leftover marinade, and roast for 35-40 minutes until golden and cooked through.
- Remove excess fat from cooking juices, pour into a jug, and serve the chicken hot with juices drizzled over.
