Food writer Elise Bauer has shared a simple trick to transform ordinary scrambled eggs into a gourmet breakfast using two unexpected ingredients: kale and mozzarella cheese.

Writing on SimplyRecipes, Bauer incorporates both ingredients into her scrambled eggs, noting that the cheese lends the eggs a wonderfully gooey, melted quality, while the kale provides a wholesome, nutritious element to the dish.

Ingredients and method

The recipe serves two and calls for four large eggs, beaten; one ounce of fresh kale, de-stemmed and thinly sliced; half a cup of grated mozzarella cheese; a quarter cup of chopped onion; half a teaspoon of Italian seasoning (dried rosemary, oregano, thyme, basil); a pinch of red pepper flakes; and salt and pepper to taste.

Begin by heating the oil over a medium-high heat, and once it's hot, add the onion and red pepper flakes, cooking for one minute. Toss in the kale and stir everything together, cooking until the kale begins to wilt.

Reduce the heat to medium and add the beaten eggs, stirring until they start to set. Then mix in the mozzarella cheese and Italian seasoning. Take off the heat, continuing to stir until the cheese has melted and the eggs are fully cooked. Season with salt and pepper and serve straight away.
