Chef's Oven-Baked Egg Hack Beats Frying Pan

Chef Will Murray, co-founder of London's Fallow restaurant, has shared a simple hack for making perfect fried eggs without using a frying pan. The technique involves baking eggs in a tray, ensuring consistent results every time.

The Oven Method

In a TikTok video from July, Murray explained that during breakfast service, they fry upwards of 50 to 100 eggs a day. Instead of frying, they bake the eggs in a tray with wide moulds, similar to a Yorkshire pudding tin. Add a modest amount of oil to each mould, crack the eggs in, and bake for exactly two and a half minutes at 160°C (320°F) with a touch of humidity.

Murray noted that at home, you can use a small pan of water to create humidity. After baking, season with salt and pepper. He said: "Absolutely perfectly fried eggs. Really consistent every time."
